Burger-Steak
Summary: This is one of my go-to recipes. My family learned about seasoning beef with coffee on a trip to the Bahamas over a decade ago. Not only does the aroma and the slightly earthy & acidic flavor of roasted beans go well with beef, it gives the burger-steak an incredible crust. This recipe may be easily expanded to two (or three) 16-oz. burger-steaks if your skillet is large enough.
Ingredients:
1 lb ground beef – preferably Belgian Blue
1-2 tbsp ground coffee
½-1 tsp kosher salt (to taste)
2 tbsp olive oil or avocado oil for frying
(optional) 1 tbsp of butter for the resting plate
Instructions:
1. Preheat oven to 250 F.
2. Remove raw ground beef from packaging, loosen it, and then form it into a 16 oz. patty.
3. Encrust the patty with ground coffee (~1-2 tbsp) and kosher salt (~1/2-3/4 tsp) until neither will stick.
4. Place the patty onto a racked sheet pan.
5. (Optional) Let the patty rest in the fridge for at least an hour and up to six hours to let it dry and improve the crust even further.
6. Place the beef into the preheated oven. When it reaches an internal temperature of 127 - 129 F (about 40-50 minutes), remove it let it rest for 8-10 minutes while preheating a cast iron skillet over medium-high.
7. Pour 1-2 tbsp avocado oil into skillet and sear the beef for 1 minute per side.
8. (Optional) Before eating, allow the burger-steak to rest on a warm plate doused with melted butter for about 3 minutes. For some reason, butter and coffee go remarkably well together.
9. Enjoy! Can be served with a little bit of sour cream for dipping.
